Properly 'wastED'

Pioneering chef Dan Barber hits London's Selfridges with innovative pop up dining concept “wastED”. His first venture in London, sitting on the roof of Selfridges until 2nd April 2017, will draw from the inspired education of the food waste movement in London.

Taking its names from “waste EDucation” their mission is simple, “... to celebrate what chefs do every day on their menus (and peasant cooking has done for thousands of years)”. Going on to say “… creating something delicious out of the ignored or un-coveted and inspiring new applications in our food system.”

The menus are designed to raise awareness of food waste and it is here, Barber himself has become known for presenting the unexpected. In a recent feature by Richard Vines on Bloomberg.com Barber stated, "To put together a menu in a different city is to be forced to learn about its history and its agricultural realities. And the food scene in London is very vibrant.” He went to say, “We get to choose what's for dinner when really we need a pattern of eating that supports a landscape."

The wastED experience has now become a community in and of its own right and draws in some magnanimous names as guest chefs. Folks like Nuno Mendes and Bruno Loubet will undertake chef duties, as will Jason Atherton and Sat Bains - but diners won't know who’s in the kitchen until they arrive. Drinks will come courtesy of Mr Iain Griffiths, from the Mr Lyan school of liquor. Together they’ll each reimagine, recreate and, as the website suggests, “even riff on a British Classics”.

The wastED experience began in March 2015 at Barber’s own Blue Hill restaurant in Greenwich Village. Focused on the theme of food waste and re-use wastED is a concept conceived by Barber. A man who over the years has garnered many accolades including being a James Beard Foundation award winner and Time Magazine most influential. As well as being a TED speaker, Dan has also been featured on Netflix’s own ‘Chef’s Table’.
